Logan Square’s newest omakase counter delicately rides the line between restraint and audacity. Chef Otto recently paid a visit to Tock HQ, where he spoke about his philosophy. “No magic is the best magic.” He believes in technique, discipline, and being your own boss. The Austin native specializes in edomae sushi, which uses aging, curing, and marinating to create layers of depth, complexity, and umami. “Chicago is a big dream place and I’m living the dream of any chef right now, where I can do whatever the hell I want.” Tock TipKyōten uses a very special and exclusive varietal of rice from Japan called Inochi-no-Ichi, the first (and currently only) restaurant in the US to use this particular grain.
