Logan Square’s newest omakase counter delicately rides the line between restraint and audacity. Chef Otto recently paid a visit to Tock HQ, where he spoke about his philosophy. “No magic is the best magic.” He believes in technique, discipline, and being your own boss. The Austin native specializes in edomae sushi, which uses aging, curing, and marinating to create layers of depth, complexity, and umami. “Chicago is a big dream place and I’m living the dream of any chef right now, where I can do whatever the hell I want.”

Tock Tip

Kyōten uses a very special and exclusive varietal of rice from Japan called Inochi-no-Ichi, the first (and currently only) restaurant in the US to use this particular grain.

At Kitsune, she combines her passion for Midwestern bounty with Japanese-inspired flavors and techniques. Kitsune's namesake is the mythological spirit fox of Hokkaido. It has magical powers, like the ability to shapeshift. Kitsune-tsuki is the state of being possessed by the fox.

Cafe Spiaggia, the casual counterpart to Spiaggia, may be more laid back, but it’s no less delicious. Open for lunch and dinner, the menu from chefs Tony Mantuano and Joe Flamm is filled with charcuterie, seasonal antipasta, and handmade pastas, like the perfectly-shaped gemelli with pheasant confit and pesto. Plus, Rachael Lowe’s beautifully-crafted wine list is like a global encyclopedia containing over 700 vintages and varietals.

Don’t skip on the assortment of daily pastries for dessert. Pair one with a glass of CH Spiaggia amaro.

2nd Annual Beefsteak - Degustation of RPM Steak

Join in on the tradition of the Beefsteak, a meat-centric banquet dating back to mid-19th century New York City. This year’s second annual celebration, a “Degustation of RPM Beef” features steaks around the world, from American Wagyu to Japanese A-5. Wine Director Richard Hanauer will showcase Russian River Valley Pinots from George Wine Company and RPM Old Fashioneds featuring High West Double Rye.

Tock Tip

Eating with one's fingers and getting messy was integral to early beefsteak culture. Now? Not so much, but we still encourage it.

Mosquito Supper Club

Supper is about telling a story. At Mosquito Supper Club, located on Dryades Street in New Orleans, that story is about life on the bayou. This family-style Cajun meal, served once per night, celebrates the bounty of shrimpers, oyster fishermen, crabbers and farmers. Pull up a chair and chow down on delicious dishes like soft-shell crab, shrimp okra gumbo, and crawfish boulettes.

It's not overly-trendy, but it is authentic, and this makes it cool. Chef Melissa Martin is super personable, and part of a movement supporting women purveyors in a male-dominated industry.
